Looking for Eliza Sammons

Eliza was my great grandmother. She was born in 1848 to Charles and Elizabeth Sammons (Westmill, Herts. UK area). In 1868 she had an illegitimate child - William Edward. His life I have been able to trace with one missing part.What happened to him in 1891 - he is not on the census!

The real puzzle is what happened to Eliza Sammons. I can find no marriage references that totally check out. She MAY have gone to work for a household in Shoreditch (1871 Census). The family has London roots and William ended up living in the Brixton area.

Eliza MAY have gone to New York, America, as her brother had moved there and her grandson (my father - Charles William George Sammons) also visited New York working on the "Olympic". Eliza's possible visits appear to have been in 1895,1896,1897 under the name Miss E Sammons but is it E for Eliza?

I have also traced the death of an Eliza Sammons in 1882 in Whitechapel, an area going back to the 1600s for the family.

Quite a few leads, some assumptions but no proof. It's made harder for me as I live in Spain.

So, help please in:
1) Tracing William Edward's whereabouts at the time of the 1891 Census
2) Discovering what happened to Eliza Sammons

I should mention that the Sammons name appears in many forms Salmons, Salmon, Salmond , Summons even Simmonds!
