GEORGE - Cannot find him in 1881 census. On Scotlands People there is 1 death for a George Sowersby between 1871 and 1881

MARIAN - 1881 census - at 93 Kirkgate, South Leith, working as a Domestic Servant:cannot find her in 1891 census but on Scotlands People there is 1 marriage in Leith for female M Sowersby between 1881 - 1911

JOHN - cannot find him in 1881 census but in 1891 I have a John living at Albany Street, North Leith. He states he was born in Edinburgh, but his children's names are family names so accept it if you wish to.
