Brick Wall on Finding Parents Info on My G Grand Dad George Park Scottish Born Belfast Residence 1878 1938

I have a Belfast newspaper article when he was named a JP (early 1900's) where George states he was born in Stornoway, Scotland (been on Scotland people and can't find him). His date of birth would be +-3 years 1850. Supposedly he spent his youth in Greystones, County Wicklow. My gram's story was he and his brothers were orphaned young.

George married Sarah McClelland (both of Belfast) in 1878 and listed his father as William (a plasterer). Found William Park plasterer in Scotland People but the age is all wrong.

George and Sarah named their first born son Edward Shanks. There was an Edward Shanks in Belfast as a tailor who died 1870. Edward's son as mentioned on PRONI was also a tailor. Did Edward "adopt" or "apprentice" George?
Edward Shanks wife was a Marcella Boyd. George's 2nd married in 1908 after Sarah McClelland passed in 1904, was to a Isabelle Boyd. Way to coincidental, huh?
