but Sarah was named as Sarah Jane CANE when their son John Hyde HARTLEY was born in 1852.

Correct me if I'm wrong.
Sarah's maiden name was CANE.
Her first marriage was to a PIDCOCK and she remarried to Thomas HARLEY under her married name of PIDCOCK.

Anyway, do you have any further details for the PIDCOCK lines you are looking for in Victoria. A few given names will assist with record searches.
