Prussian or German background on family of Denzik or Jedamzik

I don't have access to world wide information so I'm putting this information out there..maybe someone will be able to enlighten me some more on my husband's family. I'd like to go back farther then when they arrived but have not had success. I do have a copy of a letter written to William (son) from a cousin in Germany during the war I believe. The spelling of the name on the ships list was "Fdanzik". The spelling of the last name was eventually changed to Denzik.

Brick wall

My great grandmother was Ruth Gaston. According to my Aunt (now deceased), her parents names were Mary Mosely and James Gaston. Ruth was born Aug 2 1890 NE and died April 9, 1991 IN. I have seen a couple of different dates for her date of birth. I've only been able to locate her in the 1920 census when she was married to Charles Augustus Ash.
I think it's odd that I can't locate her or her parents in the census (1900). Any suggestions would be apprecated!
