After a bit of research it appears that:

In 1855 a Joseph McCormick was the first recorded McCormick birth (in Auckland). No parents names were recorded

In October 1852 there was a J. McCormick in the Coromandel

A Matthew McCormick was in Auckland in February 1854

Donald McCormick (1804-1882) was the first McCormick settler in Marlborough
He arrived in Nelson in December 1854 from Argyll, Scotland with his wife Mary (1806-1882) and children and settled in Picton
.. their children were:
Hector - 24 year old son
- in 1888 he had some of his fingers badly smashed in a railway crane accident at the Picton wharf
- he died aged 70 in 1900
- he and brother Hugh are buried together at Picton Lawn cemetery
Sarah - adult daughter
Mary - adult daughter
Donald - 11 year old son
- he was the first recorded marriage in New Zealand
- he married Catherine McConvill in 1866
- Catherine was born 20th Nov 1845 in County Armargh, Ireland
- McCormick House was built for him on his prominent half acre site (photo of this Donald at that link)
Hugh - 9 year old son
- he died in 1912 and is buried with brother Hector
